Flavoured Sugar for Cocktails: A Bartender's Guide to Rims, Muddles and Syrups

Flavoured sugar has been sitting in the pantry section of most people's thinking when it belongs behind the bar. It rims a glass more cleanly than plain sugar, dissolves into a shaker without diluting the drink, and gives you flavour control that a bottled syrup can't.

Rimming

Wet the rim of a glass with a citrus wedge or a small amount of the spirit itself, then roll it in flavoured sugar on a flat plate. Unlike salt, sugar tends to clump if the rim is too wet, so a light, even coat works better than a heavy dunk. Strawberry and vanilla both rim well; mocha is better suited to the drink itself than the glass edge.

Dissolving into a shaker

Flavoured sugar can replace simple syrup directly in most recipes. Because it's dry rather than liquid, use slightly less than the syrup measurement calls for and shake hard to make sure it fully dissolves, particularly with ice-cold ingredients where sugar dissolves more slowly.

Making a quick flavoured syrup

If a recipe specifically needs liquid syrup rather than dry sugar, dissolve flavoured sugar in warm water at a 1:1 ratio, stirring until fully clear. This keeps for about a week refrigerated and gives you a flavoured syrup with none of the artificial aftertaste that comes with most bottled versions.

Pairing flavours with spirits

  • Vanilla and bourbon is a pairing that barely needs explaining. Also works well with dark rum.
  • Strawberry and tequila or gin brightens both spirits without fighting them. Also strong in a Daiquiri.
  • Mocha and dark spirits like coffee liqueur, dark rum or bourbon lean into dessert-style cocktails and Espresso Martini variations.

Building a bar kit

Three of our four flavours cover the range most home bars need: Dirty Vanilla for bourbon and rum builds, Juicy Strawberry for tequila and gin, and Midnight Mocha for dessert cocktails. The Full Set gets all of them in one order, plus Spiced Chai for hot drinks, which is the fastest way to stop guessing which one a recipe wants.
