How Flavoured Sugar Is Made: From Raw Sugar to Finished Pouch

Making flavoured sugar sounds simple: sugar plus flavouring. In practice, getting flavour to sit evenly on a crystal without clumping, over-moistening, or losing its potency over a few weeks takes more work than it looks like from the outside.

Choosing the sugar base

The base isn't just a delivery vehicle. Demerara, cane and muscovado each carry flavour, moisture and colour differently, so the base is chosen to match the flavour rather than picked for convenience. A delicate flavour on a heavy, molasses-rich muscovado base gets overpowered. A rich flavour on plain white sugar reads thin.

Adding the flavouring

Flavouring is added as a concentrated extract or powder, then mixed through the sugar until every crystal is coated evenly rather than sitting in flavoured clumps next to plain sugar. Getting this distribution right, especially with ingredients like cocoa powder that behave differently to a liquid extract, is the most technically demanding part of the process.

Drying and moisture control

Flavouring introduces moisture, and too much of it makes the sugar clump and eventually go hard in the bag. The mixture has to be dried and monitored carefully so the final product still pours like sugar rather than setting like a brick.

Quality checks

Before a batch is packed, it's checked for consistency of flavour distribution, crystal size, colour and moisture. A batch that's uneven, too wet, or too pale for the flavour it's supposed to carry gets reworked rather than shipped.

Hand-packing

Every pouch is filled and sealed by hand rather than run through automated packing lines, which is slower but keeps quality control tight at small volumes. It's also, frankly, the only realistic option before you're running at a scale that justifies machinery.

Where it happens

All four Crush & Cane flavours, Dirty Vanilla, Juicy Strawberry, Midnight Mocha and Spiced Chai, are made and hand-packed in London. No factory floor, no automated line. Just a process built to get the ratio right before it goes in the bag.
